The oyster mushroom (Pleurotus ostreatus) is one of the most widely grown mushroom species in the world. It appeared in the European cuisine in the late 20th century. It is an outstanding source of potassium, phosphorus and magnesium, and contains ample dietary fibres. It is also rich in vitamins B and D, and in trace elements such as zinc, boron and copper.
